The raisined, honey flavours of our liquoreux white wines.
These wines are produced from our best terroirs using maximum concentration Chenin (raisined grapes) obtained either by passerillage or by noble rot (caused by Botrytis fungus).
* Les Chavagnes, the name of a plot above St Aubin church. * Les Onnis, selected from the Chaume terroir. * Our Quarts de Chaume. In the Middle Ages, seigniors who were entitled to premiums on leases took the best parts (quarts) of the Chaume harvest. These were the plots which faced due south. * Our Sélections de Grains Nobles. Small bunches of very raisined grapes.
